A fresh and vibrant salad packed with quinoa, black beans, and a zesty lime dressing, perfect for summer meals.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine it with water or vegetable broth in a saucepan and bring it to a boil.
  3. Reduce the heat to low, cover, and let it simmer for about 15 minutes.
  4. Fluff the quinoa gently with a fork and allow it to cool.
  5. Mix together the black beans, corn, diced bell pepper, avocado, red onion, and cilantro in a large bowl.
  6. Whisk together the lime juice, olive oil, salt, and pepper in a small bowl.
  7. Add the cooled quinoa to the bowl with the vegetables and pour the dressing over the top.
  8. Toss gently to combine everything beautifully.
  9. Chill in the fridge or serve at room temperature.

Notes

Customize your salad by adding diced jalapeños for a spice kick or substituting black beans with chickpeas.
