A rustic dessert featuring a flaky, buttery crust filled with sweet and tart blackberries.

Ingredients

  • 2 cups blackberries
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the blackberries with 2 tablespoons of sugar and lemon juice; set aside.
  3. Combine the flour, remaining sugar, and salt in another bowl.
  4. Cut in the chilled, cubed butter until the mixture resembles coarse crumbs.
  5. Stir in ice water gradually until the dough begins to form.
  6. Roll out the dough into a circle of about 12 inches in diameter on a floured surface.
  7. Transfer the rolled-out dough to a parchment-lined baking sheet.
  8. Pile the blackberry mixture in the center of the dough, leaving a 2-inch border.
  9. Fold the edges of the dough over the berries.
  10. Brush the crust with a beaten egg and sprinkle with coarse sugar.
  11. Bake for 35-40 minutes until the crust is golden brown and berries are bubbling.
  12. Let the galette cool for a few minutes before slicing to serve.

Notes

Serve warm or at room temperature with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 3 days.
