Delicious and easy blueberry muffins, perfect for breakfast or snacks.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean. Cool for a few minutes before removing from the pan.

Notes

To prevent the blueberries from sinking, toss them in a little flour before folding them into the batter. Experiment with adding lemon zest for a fresh twist on flavor.
