Delicious blueberry muffins topped with a crunchy streusel, perfect for breakfast or a sweet snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, and salt.
  3. Whisk together the melted butter, egg, milk, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. For the streusel topping, combine brown sugar, rolled oats, flour, and cinnamon. Mix in the melted butter.
  6. Spoon the muffin batter into the prepared muffin tin, filling each liner about two-thirds full, then sprinkle the streusel topping.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

Toss blueberries in a little flour before adding them to prevent sinking. You can use frozen blueberries if desired.
