Boursin Chicken Orzo

A creamy and comforting one-pan meal featuring tender chicken, orzo pasta, and Boursin cheese, perfect for busy weeknights.

Ingredients

  • 1 tbsp Olive Oil
  • 1 tbsp Unsalted Butter
  • 1.5 lbs Boneless, Skinless Chicken Breast (cut into 1-inch cubes)
  • 1 tsp Salt (or to taste)
  • 0.5 tsp Black Pepper (or to taste)
  • 1 small Yellow Onion (finely diced)
  • 4 cloves Garlic (minced)
  • 1.5 cups Orzo Pasta (uncooked)
  • 4 cups Low-Sodium Chicken Broth
  • 5.2 oz Boursin Cheese (Garlic & Fine Herbs flavor, softened)
  • 3 cups Fresh Spinach (packed)
  • 2 tbsp Fresh Parsley (chopped, for garnish)

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken and cook for 5-7 minutes until golden brown.
  4. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add the diced onion and cook until softened.
  6. Add the minced garlic and stir frequently.
  7. Stir in the uncooked orzo and toast for 1 minute.
  8. Pour in the chicken broth, scraping any browned bits from the bottom of the pan.
  9. Simmer the mixture, covering the skillet, and cook for 10-12 minutes.
  10. Add Boursin cheese and stir until melted.
  11. Return the chicken to the skillet.
  12. Add the fresh spinach and stir until wilted.
  13. Serve garnished with fresh parsley.

Notes

To reheat leftovers, add a splash of chicken broth to restore creaminess.
