Ultimate Breakfast Burrito

A delicious breakfast burrito filled with fluffy scrambled eggs, savory pork sausage, and crispy potatoes, all topped with melted cheese.

Ingredients

  • 6 Large Flour Tortillas (10-inch or burrito size)
  • 1 lb Pork Breakfast Sausage
  • 8 Large Eggs
  • 2 cups Diced Potatoes (or frozen hash browns)
  • 1.5 cups Shredded Cheddar Cheese (or a Mexican blend)
  • 2 tbsp Milk (for the eggs)
  • 1 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 1 tsp Cumin
  • Salt and Black Pepper (to taste)

Instructions

  1. Heat Olive Oil in a large skillet over medium-high heat.
  2. Cook the diced potatoes, seasoning with smoked paprika, cumin, salt, and pepper until golden and crisp, about 10-12 minutes. Remove and set aside.
  3. Brown the pork breakfast sausage in the same skillet until nicely browned. Drain excess grease and combine with the crispy potatoes.
  4. Whisk together eggs with milk, salt, and pepper in a separate bowl.
  5. Scramble the eggs in the skillet over medium-low heat until soft and fluffy.
  6. Warm the tortillas in a dry skillet for about 30 seconds on each side.
  7. Assemble the burritos by layering cheese, sausage and potato mixture, scrambled eggs, and more cheese on the lower third of each tortilla.
  8. Roll the burritos tightly from the bottom, folding the sides inwards.
  9. Toast the burrito seam-side down in a hot skillet for 1-2 minutes on each side until golden brown.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
