A simple yet incredibly satisfying breakfast burrito filled with fluffy scrambled eggs, savory sausage, cheese, and colorful veggies.

Ingredients

  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 cup cooked and crumbled sausage or bacon
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)
  • 4 large tortillas
  • Salsa (for serving)

Instructions

  1. Whisk the eggs, milk, salt, and pepper in a bowl until smooth.
  2. Heat the butter in a skillet over medium heat until melted.
  3. Add the diced bell peppers and onions to the skillet, sautéing until soft.
  4. Pour the egg mixture into the skillet, stirring gently to scramble.
  5. Add the cooked sausage or bacon and cheese, stirring to combine.
  6. Warm the tortillas in a separate pan until soft.
  7. Spoon the egg mixture into the center of each tortilla, fold, and roll into a burrito.
  8. Serve warm with salsa on the side.

Notes

For fluffier eggs, avoid stirring too much while they cook. Warm tortillas before assembling to prevent tearing.
