Warm and hearty breakfast burritos wrapped in soft tortillas, filled with eggs, sausage, and colorful veggies.

Ingredients

  • 4 Flour tortillas
  • 4 Eggs
  • 1 cup Cheese (cheddar or Monterey Jack)
  • 1 cup Cooked sausage or bacon
  • 1 cup Bell peppers, chopped
  • 1 cup Onions, chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Scramble the eggs by cracking them into a bowl and whisking with salt and pepper.
  2. Cook the sausage or bacon in a skillet until crispy.
  3. Sauté the bell peppers and onions in the skillet until softened.
  4. Combine the egg mixture with the cooked sausage, peppers, and onions.
  5. Assemble the burrito by placing a scoop of the filling in a tortilla, sprinkling with cheese and rolling it up.
  6. Grill the burrito seam-side down in a skillet until golden brown (optional).
  7. Serve hot, sliced in half if desired.

Notes

Pair with fresh fruit or a green salad. For added flavor, garnish with sour cream, salsa, or cilantro.
