Breakfast Fruit Salad

A vibrant and wholesome fruit salad featuring fresh seasonal fruits and creamy Greek yogurt.

Ingredients

  • 1 cup Strawberries (washed and cut into bite-sized pieces)
  • 1 cup Green Grapes (washed and halved)
  • 1 cup Red Grapes (washed and halved)
  • 1 cup Blueberries (washed)
  • 1 Apple (washed, cored, peeled, and diced)
  • 1 Banana (peeled and sliced)
  • ¼ cup Pecans (chopped)
  • 1 cup Plain Greek Yogurt
  • 12 tbsp Honey
  • ½ tsp Vanilla Extract
  • ½ tsp Almond Extract

Instructions

  1. Combine all of the fruit in a large bowl. Note: If you are preparing this salad for later, wait to add the banana until just before serving to keep it fresh.
  2. In a small mixing bowl, combine the yogurt, honey, vanilla, and almond extracts.
  3. Gently fold the yogurt mixture into the fruit.
  4. Top the fruit salad with the chopped pecans and serve immediately.

Notes

Enjoy fresh, and store leftovers in an airtight container for up to 24 hours. Add banana just before serving to prevent browning.
