Breakfast Quesadillas

Delicious and customizable breakfast quesadillas filled with fluffy eggs, fresh veggies, and gooey cheese.

Ingredients

  • 4 flour tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 4 eggs
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1/2 cup cooked sausage or bacon (optional)
  • Salt and pepper to taste
  • Cooking spray or butter for frying

Instructions

  1. Sauté the veggies in a skillet over medium heat until soft, about 5 minutes.
  2. Whisk the eggs in a bowl with a pinch of salt and pepper.
  3. Pour the eggs into the skillet with the sautéed veggies and cook, stirring occasionally, until just set.
  4. Remove the scramble from the heat and set aside.
  5. On half of each tortilla, layer some egg mixture, sprinkle cheese, and add optional sausage or bacon.
  6. Fold the tortillas in half to cover the filling.
  7. Heat some cooking spray or butter in the same skillet over medium heat.
  8. Cook the quesadillas until golden brown, about 2-3 minutes per side.
  9. Cut into wedges and serve hot.

Notes

Pairs well with salsa, guacamole, or Greek yogurt. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
