A delicious combination of gooey cheese, fluffy eggs, and savory sausage or bacon within crispy tortillas, perfect for a comforting breakfast.

Ingredients

  • 4 tortillas
  • 4 eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Heat the skillet with cooking spray or oil over medium heat.
  2. Sauté the onions and bell peppers until softened, about 3-4 minutes.
  3. Whisk the eggs with salt and pepper in a bowl.
  4. Cook the eggs in the skillet with sautéed vegetables, stirring continuously for 3-5 minutes.
  5. Set the eggs aside once scrambled.
  6. Assemble one tortilla with cheese, eggs, and sausage or bacon, topping with another tortilla.
  7. Cook the quesadilla in the skillet until golden, flipping once.
  8. Repeat the process with remaining tortillas and filling.
  9. Slice the quesadillas into wedges and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in skillet or microwave.
