A quick and healthy stir fry featuring vibrant broccoli and earthy mushrooms, perfect for busy weeknights.

Ingredients

  • 3 cups fresh broccoli florets
  • 2 cups sliced mushrooms
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds (for garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare your veggies by washing and chopping broccoli and slicing mushrooms.
  2. Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Sauté minced garlic and ginger in the hot pan for about 30 seconds.
  4. Add the sliced mushrooms and stir-fry for 5 minutes until browned.
  5. Introduce the broccoli florets and stir-fry for an additional 4-5 minutes.
  6. Create the sauce by whisking together soy sauce, rice vinegar, and sesame oil in a small bowl.
  7. Pour the sauce over the veggies and stir for another minute.
  8. Season with salt and pepper and sprinkle sesame seeds on top before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently.
