A flavorful chicken dish topped with fresh tomatoes, basil, and gooey mozzarella, bringing the essence of Italy to your table.

  • 4 chicken breasts
  • 1 cup diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) to set the stage for our baked chicken masterpiece.
  2. Combine the diced tomatoes, fresh basil, minced garlic, balsamic vinegar, salt, and pepper in a bowl. Stir until everything is well mixed.
  3. Generously season the chicken breasts with salt and pepper. Drizzle them with olive oil, ensuring they’re well coated.
  4. Place the seasoned chicken in a baking dish and top them with the tomato mixture.
  5. Slide the baking dish into the oven and bake for 25-30 minutes or until cooked through and juices run clear.
  6. During the last 5 minutes of baking, sprinkle the mozzarella cheese over the chicken and return to the oven until melted.
  7. Once done, pull the dish from the oven and let it cool for a moment. Serve hot with your favorite sides.

Notes

Ensure chicken breasts are of uniform thickness for even cooking. Feel free to substitute mozzarella with goat cheese or Parmesan.
