A lighter, fresher take on traditional buffalo chicken, wrapped in crisp lettuce with fresh vegetables and creamy blue cheese.

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1/4 cup celery, diced
  • 1/4 cup carrots, grated
  • 1/4 cup blue cheese, crumbled
  • 1 head of lettuce (such as iceberg or romaine)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Coat the chicken: In a bowl, mix the shredded chicken with buffalo sauce until well coated.
  2. Add crunchy veggies: Add diced celery, grated carrots, and blue cheese, mixing until combined.
  3. Season to taste: Season with salt and pepper to taste.
  4. Assemble the wraps: Carefully separate lettuce leaves and spoon the buffalo chicken mixture into each leaf.
  5. Finish with olive oil: Drizzle with olive oil if desired, then serve immediately.

Notes

For extra crunch, toss in some sliced almonds or toasted sunflower seeds. If you prefer a milder taste, try using barbecue sauce instead of buffalo sauce.
