Buffalo Chicken Stuffed Peppers

Vibrant bell peppers filled with a spicy and creamy buffalo chicken mixture, baked to perfection.

Ingredients

  • 4 large bell peppers
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting the tops off and removing the seeds.
  3. Mix the filling in a bowl with chicken, buffalo sauce, cream cheese, half of the cheddar cheese, and green onions.
  4. Stuff each bell pepper generously with the buffalo chicken mixture.
  5. Add the remaining cheddar cheese on top of each stuffed pepper.
  6. Bake covered for 25-30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until bubbly.
  8. Serve hot and enjoy!

Notes

For a milder dish, use less buffalo sauce. You can also use a rotisserie chicken for convenience.
