Delicate French madeleines with a soft, buttery shell and a hint of vanilla.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and generously grease your madeleine pans.
  2. Melt the butter over low heat and allow it to cool slightly.
  3. Whisk together the eggs and granulated sugar until light and fluffy.
  4. Stir in the vanilla extract and melted butter into the egg and sugar mixture.
  5. Sift together the flour, baking powder, and salt in a separate bowl.
  6. Fold the dry ingredients into the wet mixture using a spatula.
  7. Spoon the batter into the prepared madeleine molds, filling each about 3/4 full.
  8. Bake for about 10-12 minutes until golden brown.
  9. Cool slightly in the pans before transferring to a wire rack.

Notes

Pair with tea or coffee. Store in an airtight container for up to 3 days.
