Fluffy buttermilk pancakes that are perfect for lazy weekends or spontaneous brunches, creating delicious memories around the breakfast table.

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooking spray or extra butter for the skillet

Instructions

  1. Whisk the flour, sugar, baking powder, baking soda, and salt together in a bowl.
  2. Combine the buttermilk, egg, and melted butter in another bowl.
  3. Merge the wet and dry ingredients until just mixed; some lumps are okay.
  4. Prepare the skillet by heating it over medium heat and greasing it lightly.
  5. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Flip the pancakes once bubbles form on the surface, cooking until golden brown.
  7. Finish cooking until golden brown on the other side.
  8. Serve warm with syrup or toppings of your choice.

Notes

For fluffier pancakes, let the batter sit for a few minutes before cooking. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
