A delightful twist on traditional sushi served in a bowl, capturing all the classic flavors of California rolls.

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 ripe avocado, sliced
  • 1 cucumber, julienned
  • 1/2 pound imitation crabmeat or cooked shrimp
  • Nori sheets, cut into strips
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving
  • Sesame seeds (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and cook for 20 minutes.
  3. Remove from heat and let sit for 10 minutes.
  4. Mix rice vinegar, sugar, and salt until dissolved in a small bowl.
  5. Fold the vinegar mixture into the cooked rice and let cool.
  6. Assemble the bowls by dividing the sushi rice among serving bowls.
  7. Top with sliced avocado, cucumber, and crabmeat (or shrimp).
  8. Garnish with nori strips, sesame seeds, and serve with soy sauce, pickled ginger, and wasabi on the side.
