A delightful and comforting combination of sushi rice, avocado, cucumber, and imitation crab, these California roll bowls are easy to assemble and incredibly satisfying.

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1/2 pound imitation crab meat, shredded
  • Soy sauce, for serving
  • Sesame seeds, for garnish
  • Nori sheets, cut into strips (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine the rinsed rice and water, cooking according to the manufacturer’s instructions.
  2. Prepare the vinegar mixture by mixing the rice vinegar, sugar, and salt in a small bowl, heating gently to dissolve.
  3. Fold in the vinegar mixture into the cooked rice and allow it to cool slightly.
  4. Assemble the bowls by dividing the sushi rice among serving bowls as a base.
  5. Layer each bowl with sliced avocado, cucumber, and shredded imitation crab meat.
  6. Drizzle with soy sauce to enhance the umami flavor.
  7. Garnish with sesame seeds and nori strips before serving.

Notes

Store leftover components separately in airtight containers for up to 2 days. Reheat rice gently before assembling fresh bowls.
