A beautiful summer dish featuring juicy chicken topped with cherry tomatoes, fresh mozzarella, and basil, drizzled with balsamic glaze.

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a large oven-safe skillet over medium heat.
  3. Season the chicken breasts with salt and pepper, then add to the skillet and sear for 5-7 minutes per side.
  4. Layer the halved cherry tomatoes and mozzarella slices over the chicken.
  5. Transfer the skillet to the oven and bake for 15-20 minutes.
  6. Remove from oven and garnish with fresh basil.
  7. Drizzle with balsamic glaze before serving.

Notes

Use fresh herbs for maximum flavor. Check chicken’s internal temperature to ensure it’s cooked to 165°F.
