Delicious and healthy snacks reminiscent of carrot cake, perfect for any time of day.

Ingredients

  • 1 cup pitted Medjool dates
  • 1 cup rolled oats
  • 1/2 cup finely grated carrots
  • 1/2 cup chopped walnuts
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup shredded unsweetened coconut for coating

Instructions

  1. Soak your dates in warm water for 10 minutes, then drain completely.
  2. Grate the carrots using a grater or food processor and set aside.
  3. Chop the walnuts into small pieces.
  4. Mix the pitted dates, rolled oats, and chopped walnuts in a food processor until they start to stick together.
  5. Add the grated carrots, maple syrup, cinnamon, nutmeg, ginger, and salt to the mixture and pulse until combined.
  6. Roll the mixture into smooth balls using a tablespoon.
  7. Coat each ball in shredded coconut, pressing gently to stick.
  8. Chill the balls in the refrigerator for at least 30 minutes to firm up.
  9. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.

Notes

Make sure your dates are fresh and soak them if they are tough. Adjust spices to your preference.
