A bright and crisp salad featuring sweet carrots and nutty sesame oil with a hint of honey, ginger, and cilantro.

Ingredients

  • 2 large carrots
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon grated ginger
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon black pepper

Instructions

  1. Peel the carrots using a vegetable peeler to remove their tough outer skin.
  2. Grate the carrots into thin strips using a grater.
  3. Place the freshly grated carrots into a medium-sized bowl.
  4. Combine sesame oil, rice vinegar, and soy sauce in a small bowl.
  5. Add honey to the mixture and stir until fully dissolved.
  6. Grate fresh ginger and add it to the dressing.
  7. Pour the dressing over the grated carrots.
  8. Toss the carrots in the dressing to coat them evenly.
  9. Sprinkle sesame seeds over the salad.
  10. Add black pepper to enhance flavors.
  11. Garnish with chopped cilantro.
  12. Give everything a final toss.
  13. Allow the salad to sit for a few minutes to meld flavors.
  14. Serve immediately or refrigerate for a chilled version.

Notes

For a sweeter taste, add more honey or for extra tang, increase the rice vinegar. This salad can be made vegan by replacing honey with maple syrup.
