A light yet filling Cauliflower Fried Rice, perfect for busy weeknights and packed with vibrant flavors and nutrients.

Ingredients

  • 1 head cauliflower
  • 2 tablespoons oil
  • 2 eggs
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Soy sauce to taste
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower to create rice-like pieces.
  2. Heat 2 tablespoons of oil in a skillet over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 30 seconds.
  4. Toss in the mixed vegetables and stir-fry for 2-3 minutes.
  5. Push the vegetables to one side and crack the eggs into the empty side, scrambling until cooked through.
  6. Add the cauliflower rice to the skillet and mix everything together.
  7. Drizzle soy sauce over the mixture and season with salt and pepper.
  8. Fold in the green onions and cook for another 1-2 minutes until heated through.

Notes

Use fresh cauliflower for the best texture. Consider adding more veggies like bell peppers or spinach.
