A comforting baked potato casserole filled with juicy chicken, tender broccoli, and melted cheese, perfect for busy weeknight dinners.

Ingredients

  • 4 large potatoes
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and poke holes in the potatoes, then bake for about 45-60 minutes until tender.
  3. Heat olive oil over medium heat. Add broccoli and sauté until tender, about 5 minutes.
  4. Combine shredded chicken, sautéed broccoli, garlic powder, salt, pepper, and half of the cheese in a bowl. Mix well.
  5. Slice the potatoes open and fluff the insides with a fork.
  6. Spoon the chicken and broccoli mixture into the potatoes. Drizzle heavy cream over the top and sprinkle with the remaining cheese.
  7. Bake for an additional 20-25 minutes until the cheese is bubbly and golden.
  8. Serve warm and enjoy your comforting casserole!
