  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and cottage cheese until well blended.
  3. Stir in the shredded cheese, diced vegetables, salt, and pepper until evenly mixed.
  4. Grease a muffin tin with cooking spray or olive oil.
  5. Pour the egg mixture into each muffin cup, filling them about 3/4 full.
