A comforting casserole that combines tender potatoes with seasoned ground beef and gooey cheddar cheese, perfect for family gatherings.

  • 1.5 lbs (680g) lean ground beef (85/15 recommended)
  • 2.5 lbs (1.1kg) Yukon Gold or Russet potatoes (peeled and thinly sliced)
  • 3 cups (340g) sharp cheddar cheese (freshly shredded, divided)
  • 1 large yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1/4 cup (57g) unsalted butter
  • 1/4 cup (30g) all-purpose flour
  • 2 cups (475ml) whole milk
  • 1 cup (240ml) beef broth
  • 1 tbsp (15ml) olive oil
  • 1.5 tsp (9g) kosher salt (divided)
  • 1 tsp (2g) black pepper (freshly ground, divided)
  • 2 tbsp (8g) fresh parsley (finely chopped, for garnish)

Instructions

  1. Begin by peeling and thinly slicing your Yukon Gold or Russet potatoes. Finely chop the onion and mince the garlic. In a large skillet, heat the olive oil over medium heat and brown the lean ground beef. Add the chopped onion and minced garlic, seasoning with 1 teaspoon of kosher salt and ½ teaspoon of black pepper. Sauté until the beef is fully cooked and the onion is tender. Drain excess grease if necessary.
  2. In a medium saucepan, melt the butter over low heat. Gradually whisk in the flour, stirring constantly to create a roux. Cook for about a minute until it’s lightly golden. Slowly whisk in the whole milk and beef broth, stirring continuously to avoid lumps. Raise the heat to medium and bring the mixture to a simmer. Once thickened, reduce the heat to low and stir in 2 cups of fresh cheddar cheese until smooth. Season with the remaining salt and pepper.
  3. In a greased 9×13 inch baking dish, layer half of the sliced potatoes, followed by the beef mixture, and then pour half of the cheese sauce over the top. Repeat with the remaining potatoes, beef, and cheese sauce. Cover with foil and bake in a preheated oven at 375°F (190°C) for about 30 minutes. Remove the foil, sprinkle the last cup of cheddar cheese on top, and bake for an additional 15-20 minutes, until the cheese is bubbly and lightly golden.
  4. Once out of the oven, let your casserole rest for a few minutes. Before serving, sprinkle fresh parsley on top to add a pop of color.

Notes

Use freshly shredded cheese for the best melting and flavor. Slice your potatoes evenly for consistent cooking. You can prepare the layers the night before and bake just before serving.
