A classic dessert featuring a burst of sweet and tart cherry flavors, perfect for any occasion.

Ingredients

  • 2 cups fresh or frozen cherries, pitted
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 pie crust (store-bought or homemade)
  • 1 egg (optional, for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine cherries, sugar, cornstarch, lemon juice, and vanilla in a saucepan. Cook over medium heat until the mixture starts to bubble and thicken.
  3. Remove from heat and let cool.
  4. Roll out the pie crust and place it in a pie dish.
  5. Pour the cherry mixture into the crust and dot with butter.
  6. Cover with another piece of crust, crimp edges, and cut slits for steam.
  7. Brush with beaten egg for a golden crust (optional).
  8. Bake for 30-35 minutes until the crust is golden and the filling is bubbling.
  9. Allow to cool before serving.

Notes

Can be served warm or at room temperature. Great with vanilla ice cream or whipped cream.
