Delightful cookies that combine the nostalgic flavors of hot cocoa with a chewy texture, perfect for a cozy treat on a cold day.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, making sure it’s well blended.
  3. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  4. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
  5. Gradually blend the dry mixture into the wet mixture, mixing just until combined.
  6. Stir in the semi-sweet chocolate chips.
  7. Drop spoonfuls of dough onto ungreased baking sheets, leaving space between each dollop.
  8. Bake for 10-12 minutes; edges should be set, centers soft.
  9. Remove from the oven and top each warm cookie with mini marshmallows.
  10. Let cool on baking sheets for a few minutes before transferring to a wire rack.

Notes

Underbake slightly for a chewy texture. Store in an airtight container for up to 5 days.
