Chicken Alfredo Lasagna Rolls

Comforting lasagna rolls filled with creamy chicken and cheese, baked in rich Alfredo sauce.

Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups Alfredo sauce
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. Prepare the filling by combining the shredded chicken, ricotta cheese, 1 cup of mozzarella, 1/2 cup of Parmesan, egg, Italian seasoning, salt and pepper in a mixing bowl.
  4. Spread a layer of Alfredo sauce in the bottom of a baking dish.
  5. Roll each lasagna noodle with a spoonful of the chicken mixture tightly, placing seam side down in the dish.
  6. Pour the remaining Alfredo sauce over the rolls and sprinkle with remaining mozzarella and Parmesan.
  7. Bake for 25 minutes covered with foil, then remove the foil and bake for another 15 minutes until bubbly and golden.
  8. Let cool slightly before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven.
