  • 1 cup brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 avocado, diced
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the brown rice according to package instructions.
  2. Season the chicken breast with chili powder, cumin, salt, and pepper.
  3. Grill or pan-cook the chicken for about 6-7 minutes on each side until fully cooked.
