A comforting Chicken Burrito Casserole layered with tortillas, chicken, cheese, and more, perfect for family gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 tortillas
  • 1/2 cup sour cream (optional for topping)
  • Chopped cilantro (optional for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the shredded chicken, black beans, corn, salsa, chili powder, and cumin in a bowl until well combined.
  3. Layer 4 tortillas at the bottom of a 9×13 inch baking dish.
  4. Spread half of the chicken mixture over tortillas and top with 1 cup of shredded cheese.
  5. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  6. Cover with foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  8. Let the casserole cool for a few minutes and serve with sour cream and cilantro.

Notes

Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
