  • 3 cups cooked chicken, shredded
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 10 corn tortillas, cut into quarters
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) to prepare for the baking magic to come.
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, enchilada sauce, cumin, garlic powder, onion powder, salt, and pepper. Stir until everything is thoroughly mixed.
  3. In a greased 9×13-inch baking dish, layer half of the tortilla quarters at the bottom, creating a sturdy base.
  4. Spread half of the chicken mixture over the tortillas, followed by a generous layer of cheese.
  5. Repeat the layering process with the remaining tortillas, chicken mixture, and top with the remaining cheese.
  6. Cover the dish with foil and bake for 25 minutes. This helps the flavors meld together beautifully.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
