Delicious Chicken Enchiladas Verdes filled with tender chicken and topped with green salsa and melted cheese.

Ingredients

  • 2 cups cooked shredded chicken
  • 10 corn tortillas
  • 2 cups green salsa (salsa verde)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup sour cream
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the chopped onion in olive oil over medium heat until translucent, about 5 minutes.
  3. Mix sautéed onions with shredded chicken, seasoning with salt and pepper.
  4. Warm corn tortillas in a pan until pliable.
  5. Fill each tortilla with the chicken mixture, roll up tightly, and place seam-side down in a baking dish.
  6. Top enchiladas with green salsa and shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  8. Serve hot with a dollop of sour cream on top.

Notes

You can assemble the enchiladas a day in advance. Customize your spices for extra heat.
