A delicious Chicken Fried Rice recipe that’s quick, satisfying, and perfect for using up leftovers.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the cooked chicken and mixed vegetables, cooking until everything is heated through.
  3. Push the chicken and vegetables to one side of the skillet.
  4. Scramble the eggs in the empty side until cooked, then mix with chicken and veggies.
  5. Add the cooked rice and soy sauce, mixing to ensure every grain is coated.
  6. Stir in the chopped green onions and season with salt and pepper.
  7. Cook for an additional 2-3 minutes, stirring frequently until well combined.

Notes

Use day-old rice for best results. Feel free to customize with your favorite vegetables!
