Ingredients

Scale
  • 1/4 cup hoisin sauce
  • 2 Tbsp reduced-sodium soy sauce or tamari sauce (for gluten-free)
  • 2 Tbsp water
  • 1 1/2 Tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 Tbsp sriracha or gochujang (optional, for spice)
  • 1 Tbsp olive oil
  • 1 pound ground chicken or ground turkey
  • 1 small yellow onion (diced)
  • 2 garlic cloves (minced)
  • 2 tsp freshly grated ginger
  • 8 ounce water chestnuts (canned, drained and diced)
  • 1/4 cup green onion (chopped, plus more to serve)
  • 1 head butter lettuce or romaine hearts (separated into cups)

Instructions

  1. Prepare Your Sauces: In a small bowl, mix together the hoisin sauce, reduced-sodium soy sauce, water, rice wine vinegar, sesame oil, and sriracha. Set aside for later.
  2. Heat the Oil: In a large skillet, heat olive oil over medium-high heat until it shimmers.
  3. Sauté the Aromatics: Add the diced onion and sauté for 2-3 minutes until translucent.
  4. Incorporate Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for an additional minute.
  5. Brown the Chicken: Add the ground chicken (or turkey) and cook until browned and no longer pink, about 5-7 minutes.
  6. Add the Crunch: Toss in the diced water chestnuts and the sauce mixture. Stir and let simmer for about 2 minutes.
  7. Garnish and Serve: Remove from heat and stir in chopped green onions. Serve in crisp lettuce leaves.

Notes

For added heat, try adding diced jalapeños or sprinkle red pepper flakes into the mixture. Leftovers can be stored in an airtight container for up to 3 days.
