A comforting and flavorful Chicken Lo Mein that’s easy to whip up for weeknight meals.

Ingredients

  • 8 oz lo mein noodles
  • 1 cup cooked chicken, sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste

Instructions

  1. Cook the lo mein noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add garlic and stir-fry for about 30 seconds until fragrant.
  4. Add the sliced chicken and cook until heated through.
  5. Stir-fry the bell peppers, broccoli, and carrots for about 4-5 minutes until tender-crisp.
  6. Add the cooked lo mein noodles to the pan.
  7. Pour in the soy sauce and oyster sauce, and toss everything together until well combined.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped green onions before serving.

Notes

For extra crunch, serve with a sprinkle of sesame seeds. Pair with cucumber salad or spring rolls.
