A comforting and savory dish that combines ground chicken, melted mozzarella, and marinara sauce into delicious bite-sized meatballs.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 egg
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, salt, and pepper in a large bowl and mix until well combined.
  3. Shape the mixture into meatballs about 1 inch in diameter and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and golden.
  5. Simmer the marinara sauce in a skillet over medium heat, adding the baked meatballs and allowing to simmer for about 5 minutes.
  6. Melt the mozzarella cheese on top of the meatballs and cover the skillet until the cheese is melty and gooey.

Notes

Consider pairing with spaghetti, a garden salad, or serving as appetizers with toothpicks. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
