A beloved Italian-American dish featuring crispy breaded chicken breasts smothered in marinara sauce and topped with gooey mozzarella cheese.

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) to set the stage for the perfect bake.
  2. Flatten the chicken breasts to an even thickness using a meat mallet or rolling pin. Season them generously with salt and pepper to bring out that chicken flavor.
  3. Beat the egg until it’s well mixed in a shallow bowl.
  4. Combine the breadcrumbs and grated Parmesan cheese in another bowl.
  5. Dip each chicken breast in the beaten egg, and then coat thoroughly in the breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides—about 4-5 minutes per side.
  7. Place the golden chicken breasts in a baking dish and top with marinara sauce and mozzarella cheese.
  8. Bake for about 20 minutes or until the cheese is bubbly and golden brown.
  9. Garnish with fresh basil before serving.

Notes

For a complete meal, serve with spaghetti or an arugula salad. Leftovers can be stored in an airtight container for up to 3 days.
