A delicious Chicken Pesto Panini, featuring melty mozzarella and flavorful pesto, all toasted perfectly between golden slices of ciabatta or sourdough.

Ingredients

  • 2 slices of ciabatta or sourdough bread
  • 1 cup cooked chicken, shredded
  • 1/4 cup pesto sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup sun-dried tomatoes (optional)
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat your grill by setting a panini press or skillet over medium heat.
  2. Spread pesto on one side of each slice of bread.
  3. Assemble the sandwich by layering chicken, mozzarella, and sun-dried tomatoes on one slice of bread.
  4. Season with salt and pepper, and place the other slice of bread on top, pesto side down.
  5. Brush the outside of the sandwich with olive oil.
  6. Grill until the bread is golden brown and the cheese is melted, about 5 minutes.
  7. Serve warm, sliced in half.

Notes

For added crunch, consider adding fresh spinach or arugula. Homemade pesto greatly enhances the flavor.
