A classic Italian dish featuring tender chicken breasts in a tangy lemon-caper sauce, perfect for family gatherings or weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour, for dredging
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers, rinsed
  • Chopped fresh parsley, for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Put the flour in a shallow dish and dredge each chicken breast in the flour, shaking off the excess.
  3. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown, about 3 minutes per side, then remove from the skillet.
  4. Add the fresh lemon juice, chicken broth, and rinsed capers to the skillet, bringing the mixture to a gentle simmer.
  5. Return the chicken to the skillet and let it cook for an additional 5 minutes.
  6. Remove the chicken once more and stir in the remaining butter until melted into the sauce.
  7. Plate the chicken, spooning the sauce over the top and garnishing with fresh parsley.

Notes

Serve with pasta, rice, or a light salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
