A vibrant bowl of Chicken Tikka Masala that wraps you in warmth with its perfect balance of spices and creaminess.

Ingredients

  • 500g chicken breast, cut into cubes
  • 1 cup plain yogurt
  • 2 tablespoons tandoori spice mix
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 can (400g) crushed tomatoes
  • 1 cup coconut milk or cream
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the chicken in a bowl with yogurt and tandoori spice for at least 1 hour.
  2. Heat oil in a pan over medium heat and sauté the finely chopped onions until golden brown.
  3. Stir in the minced garlic and grated ginger, cooking until fragrant.
  4. Add the marinated chicken and cook until browned, about 7-10 minutes.
  5. Incorporate the crushed tomatoes and cook for about 10 minutes.
  6. Pour in the coconut milk and gently simmer for 15 minutes, seasoning with salt.
  7. Garnish with fresh cilantro before serving.
