Ingredients

  • Tortilla chips
  • Red salsa (salsa roja)
  • Cooked chicken (optional)
  • Fried eggs
  • Cotija cheese
  • Sour cream
  • Onion, sliced
  • Fresh cilantro

Instructions

  1. Heat the red salsa in a large skillet over medium heat until it simmers gently.
  2. Add the tortilla chips to the skillet and stir to coat them with salsa.
  3. If using chicken, add it now and stir until warmed through.
  4. Remove from heat and plate the chilaquiles mixture.
  5. Top with fried eggs, Cotija cheese, sour cream, onions, and cilantro.
  6. Serve immediately and enjoy!

Notes

Use sturdy tortilla chips to avoid breaking. For a milder dish, choose a milder salsa.
