A comforting casserole that channels the flavors of classic chili cheese dogs, perfect for gatherings and weeknight suppers.

  • 6 hot dogs
  • 1 can (15 oz) chili (with or without beans)
  • 1 cup shredded cheddar cheese
  • 1 cup cornbread mix
  • 1 cup milk
  • 1 egg
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional toppings: diced onions, jalapeños, or extra shredded cheese

Instructions

  1. Slice the hot dogs into bite-sized pieces.
  2. In a large bowl, combine the sliced hot dogs with the chili.
  3. In another bowl, whisk together the cornbread mix, milk, egg, onion powder, garlic powder, and salt and pepper until smooth.
  4. Grease a 9×13 inch baking dish. Pour the chili and hot dog mixture into the dish evenly.
  5. Gently spoon the cornbread batter on top, spreading it evenly without disturbing the chili below.
  6. Sprinkle the shredded cheddar cheese generously on top.
  7. Place the dish in a preheated oven at 375°F (190°C) for about 30 minutes, or until the cheese is bubbly and the cornbread is golden brown.
  8. Once baked, let the casserole cool for about 10 minutes before serving.

Notes

Pairs well with a simple side salad or tortilla chips for a delightful crunch. Store leftovers in an airtight container in the fridge for up to 3 days.
