A delightful breakfast sandwich featuring chipotle aioli, sausage patties, and fluffy scrambled eggs, perfect for busy mornings or weekend brunch.

  • 1/2 cup mayonnaise
  • 12 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
  • 1 tsp lime juice
  • 1/4 tsp garlic powder
  • 2 brioche buns (split)
  • 2 sausage patties
  • 4 large eggs
  • 2 tbsp milk
  • 2 slices cheddar cheese
  • 1 tbsp butter
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Prepare the Chipotle Aioli: In a small bowl, combine the mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder. Whisk until fully combined and smooth. Set aside to let those flavors meld together.
  2. Cook the Sausage Patties: Place a large skillet over medium-high heat. Add the sausage patties and cook for 3-4 minutes per side, until browned and cooked through. Transfer to a plate and keep warm.
  3. Toast the Brioche Buns: Reduce the heat to medium. Spread butter on the cut sides of the brioche buns. Place them cut-side down in the skillet and toast for 1-2 minutes until golden brown and crisp. Remove from the skillet and set aside.
  4. Whisk the Eggs: In a separate bowl, whisk together the eggs, milk, salt, and pepper. This step helps to create light, fluffy scrambled eggs.
  5. Cook the Scrambled Eggs: Melt the remaining butter in the skillet over medium-low heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are soft and fluffy. Be cautious not to overcook them; you want them tender and a little creamy.
  6. Assemble the Sandwich: Spread a generous amount of the prepared chipotle aioli on both halves of the toasted buns. On the bottom bun, layer a sausage patty, half of the scrambled eggs, and a slice of cheddar cheese. Place the top bun on, and serve immediately.

Notes

For added flavor, consider experimenting with other cheeses or adding sautéed veggies.
