A rich and creamy chocolate mousse that brings the taste of a French café to your home.

Ingredients

  • 1 cup heavy cream
  • 4 oz bittersweet chocolate, chopped
  • 3 large eggs, separated
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Melt the chocolate in a double boiler or microwave until smooth. Allow it to cool slightly before using.
  2. Whip the egg whites with a pinch of salt until stiff peaks form.
  3. Whip the heavy cream until soft peaks form.
  4. Combine the egg yolks and sugar, then stir in the melted chocolate and vanilla extract until blended.
  5. Fold the whipped cream into the chocolate mixture gently.
  6. Incorporate the beaten egg whites until fully incorporated.
  7. Chill the mousse in serving dishes for at least 2 hours before serving.

Notes

Serve with fresh berries or a dollop of whipped cream. Can be stored for up to 3 days in the fridge.
