A zesty and flavorful chicken dish marinated in lime, cilantro, and spices, perfect for grilling and summer meals.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Whisk together olive oil, lime juice, cilantro, garlic, cumin, salt, and pepper in a bowl.
  2. Place chicken breasts in a bag or dish and pour the marinade over them.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
  4. Preheat grill to medium-high heat.
  5. Remove chicken from the marinade and grill for about 6-7 minutes on each side.
  6. Remove from grill and let rest for a few minutes.
  7. Serve with additional cilantro and lime wedges.

Notes

For the best flavor, marinate for the full 2 hours if possible. Consider using the marinade for shrimp or fish as well.
