A vibrant and refreshing Cilantro Lime Shrimp Bowl with perfectly cooked shrimp, fluffy rice, and colorful vegetables, all drizzled with zesty lime juice.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced
  • 1 cup corn (fresh or frozen)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Marinade the shrimp in a bowl with lime juice, minced garlic, cilantro, salt, and pepper for 15 minutes.
  2. Heat olive oil in a skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes on each side until pink and opaque.
  3. Assemble the bowl by layering cooked rice, shrimp, cherry tomatoes, bell peppers, and corn.
  4. Garnish with extra lime juice and fresh cilantro before serving.
