1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract for cheesecake filling
Optional: Cinnamon sugar for topping
Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, baking soda, and salt. Set this aside.
Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
In a separate bowl, mix together the cream cheese, powdered sugar, and vanilla extract until smooth.
Take a tablespoon of cookie dough, flatten it in your palm, and add a dollop of cheesecake filling in the center. Fold the dough around the filling and form a ball.
Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.
If desired, sprinkle cinnamon sugar on top of each cookie.
Bake for 10-12 minutes, until edges are lightly golden.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
