A nostalgic and creamy potato salad perfect for summer gatherings and picnics.

Ingredients

  • 2 pounds red potatoes
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup red onion, diced
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the red potatoes in a large pot of salted water until tender, about 15-20 minutes.
  2. Prepare the dressing by combining mayonnaise and Dijon mustard in a large bowl.
  3. Dice the cooled potatoes into bite-sized pieces and add to the dressing.
  4. Fold in the diced red onion and fresh dill.
  5. Season the salad with salt and pepper to taste, stir gently, and chill in the refrigerator for at least 30 minutes.

Notes

Adjust the creaminess by tweaking the amount of mayonnaise. Leftovers can be kept for 3-4 days in the refrigerator.
