A nostalgic and creamy potato salad that’s perfect for summer barbecues and family gatherings.

  • 4 medium potatoes
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 small onion, diced
  • 2 stalks of celery, diced
  • 3 hard-boiled eggs, chopped
  • 1 tablespoon vinegar

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. Drain and cool the potatoes, then chop them into bite-sized cubes.
  3. Prepare the dressing by whisking together mayonnaise, mustard, vinegar, salt, and pepper.
  4. Add the chopped potatoes, diced onion, celery, and hard-boiled eggs to the dressing.
  5. Mix gently to combine without mashing the potatoes.
  6. Chill the salad in the refrigerator for at least one hour before serving.

Notes

For best results, use waxy potatoes like red or Yukon gold. Customize with add-ins like relish or fresh herbs to suit your taste.
